Just four ingredients create a gluten free and healthy energy balls recipe.

  • 1 cup raw (or roasted) cashews
  • 6 large medjool dates, pits removed (use 7 or 8 dates if using the less-sweet raspberries below)
  • ½ cup freeze dried strawberries (or raspberries)
  • 1 teaspoon of vanilla extract
  • Pinch of salt flakes
  • Optional: decorator sugar sprinkles, powdered sugar and/or cayenne pepper
  1. Place cashews in food processor and pulse until crumbly. Leave a few bigger chunks to give the bites some nice texture.
  2. Add dates and pulse until the mixture starts to come together to form a sticky “dough”.
  3. Add vanilla extract and salt flakes and pulse again to combined.
  4. Add freeze dried berries and pulse until just combined.
  5. Using hands, roll approximately 1 heaping teaspoon of dough into bite-sized balls.
  6. First optional: pour about ¼ cup powdered sugar on a plate and mix in a dash of cayenne pepper, if desired. Roll balls around in powdered sugar until coated all over
  7. Second optional: pour a few teaspoons of decorator sugar crystals on a plate and mix two colors of sugar, if desired. Roll balls around in sugar sprinkles until well coated all over.
  8. Transfer to and store in an airtight container or ziplock bag. Refrigerate for up to two weeks.
