Here, I used two varieties of frozen berries, some unsweetened flaked coconut, some mini chocolate chips, and yes, even a couple of pansies from my winter flower boxes. Really, the possibilities for various toppings and combinations is almost limitless. I like this idea of adding egg whites to your oatmeal; the egg whites add protein and make the oatmeal fluffier. And who could resist this Elvis-style idea of peanut butter and banana oatmeal?
I actually got the idea to use frozen berries as an oatmeal add-in from the beautiful Instagram photos by Lara at Lara’s Kitchen. Lara’s photography and food styling puts mine to shame, but oh, how she inspires me! Frozen berries happen to be a practical add-in, helping to quickly cool down a hot bowl of oats, and the berries better maintain their texture and don’t get mushy before you eat them.
I usually add a bit of honey to lightly sweeten and enhance the floral and fruit theme of this oatmeal breakfast bowl. Oatmeal all floral and fancy makes breakfast fun and yum again!
