A grilled cheese sandwich with sweet and spicy pickles…to me, this is pretty much heaven.
My sweet friend Laura recently gave me some homemade sweet pickles spiced with cayenne and other peppers. I happen to love pickles, and I love spicy food, so these were a big hit with me.
One evening when I was tired and didn’t want to do any major cooking and when the fridge and pantry were pretty bare, I decided on grilled cheese with these sweet and cayenne spiced pickles. Honestly, this was so scrumptious that I could have eaten three of these sandwiches in one sitting!
I used plain ol’ store-bought white bread here, a scant tablespoon of unsalted butter, three slices of pre-sliced extra sharp cheddar, and, of course, the sweet and spicy pickles. Honestly, the options are endless here…you could use some rustic “good” bread instead, and other cheeses like gouda or brie would be wonderful. I swear, I could devote an entire blog to grilled cheese sandwiches! Enough said…I’m signing off…got to go make grilled cheese with sweet and spicy pickles!
