Extra Lemony Jello Cool Whip Parfaits

Extra Lemony Jello Cool Whip Parfaits…I’ll just go ahead and tell you that this summery dessert is soooo easy to make, that it can hardly be called a recipe!

But aren’t these Extra Lemony Jello Cool Whip Parfaits oh, so pretty?! They’re made with just two ingredients: lemon-flavored Jello and Cool Whip.

The garnish of lemon zest and a single raspberry on top is optional, but really adds some pizzazz to the presentation. Plus, that bit of lemon zest adds even more lemon flavor.

Got lemon? These Jello parfaits do!

To make Jello gelatin extra lemony, simply leave out 1/4th of the water called for on the directions. For this reason, I use two two boxes of lemon-flavored Jello gelatin. Reducing the water by a quarter intensifies the lemon flavor, but surprisingly doesn’t make it too sweet. To make the Jello firm up even faster, be sure to substitute 1 cup of ice for 1 cup of the cold water. After the Jello has firmed up in the fridge, simply layer the Cool Whip and Jello in clear serving containers of your choice. Here, I used mini trifle bowls that I found at Walmart recently, but tall parfait glasses would make a stunning presentation too.

Again, topping with some lovely lemon zest also will enhance the lemon flavor.

This is so easy, it’s really not even a recipe…

I lightened this dessert up by using sugar-free Jello and Cool Whip Lite, and I think it’s just as tasty as the regular Jello and Cool Whip, and probably much healthier. Regular or light, though, this is a perfect, easy, and refreshing summer dessert. Enjoy!

    These parfaits looked so yummy that I went out and bought Cool Whip this afternoon! They were out of lemon jello so I’ll use a different flavor. Such a great combination of flavors and a very summer like dessert!
