Fruit and Nut Spring Rolls

Spring rolls filled with sliced fruit and almonds are paired with a honey and lime dipping sauce

  • For the filling:
  • Fruit of your choice, such as kiwi, strawberries, mangos, blueberries, cherries, apples, and cantaloupe, thinly sliced
  • Two rice paper sheets
  • Two tablespoons slivered or sliced almonds
  • For the dipping sauce:
  • One tablespoon honey
  • One tablespoon fresh lime juice
  • optional: fresh jalapeno slice
  1. Mix up one part lime juice to one part honey (about a tablespoon of each is plenty for two wraps). For added spice, add a jalapeno slice to the dipping sauce. Set aside.
  2. Have fruit of your choice sliced and ready.
  3. Have sliced or slivered almonds ready.
  4. Have a clean plate or flat work surface ready to prepare spring rolls.
  5. Dip a rice paper sheet in water for about ten seconds (sometimes I just place the wrapper under running water).
  6. Place wet wrapper immediately on a plate or work surface.
  7. Quickly lay a few pieces of fruit and about a tablespoon of almonds in the lower-middle of the rice paper wrapper.
  8. To roll up your roll, first fold over the bottom edge of the wrapper over the filling, then fold over the edges towards the center and continue rolling the filled wrapper until it's closed and snug.
  9. Serve rolls with dipping sauce on the side.
