Tequila Thyme Spritzer is made with just four ingredients: thyme-infused sugar syrup, tequila, lemon juice, and seltzer.

  • For the thyme-infused sugar syrup:
  • 3 cups water
  • 2 cups sugar
  • 5 to 15 sprigs of fresh thyme, depending on how strong a thyme taste that you desire
  • For the Tequila Thyme Spritzer cocktail:
  • 2 ounces thyme-infused sugar syrup, cooled to room temperature or chilled
  • 2 ounces tequila
  • Juice of medium lemon (about 1.5 ounces)
  • 4 ounces seltzer water
  • Optional garnishes: lemon slices or wedges, sprigs of fresh thyme
  1. For the thyme-infused sugar syrup:
  2. Bring water, sugar and fresh thyme sprigs to boil in medium saucepan, stirring until sugar is dissolved.
  3. Remove from heat and let thyme sprigs steep until syrup turns a golden honey color.
  4. Remove thyme sprigs carefully and let syrup cool to room temperature.
  5. Pour cooled syrup into glass container and store covered for up to 3 months.
  6. For the Tequila Thyme Spritzer cocktail:
  7. Mix cooled thyme-infused sugar syrup, tequila and freshly squeezed lemon juice in cocktail shaker filled halfway with ice, and shake for 30 seconds.
  8. Pour into medium or tall glass filled with ice cubes and add spritzer to top of glass, gently mixing the liquids until incorporated.
  9. Garnish with fresh sprigs of thyme and lemon slices or wedges.
