Gluten Free Green Bean Casserole

Just five ingredients are needed for this easy and delicious gluten free holiday casserole.

  • 1 pound fresh green beans, cut into 1 to 2 inch pieces if using long french beans. Can also use frozen green beans or canned.
  • ½ pound bacon
  • 1 18-oz can of gluten free cream of mushroom soup (not condensed). I prefer the Progresso brand.
  • 1 6-oz can of gluten free french fried onions (I like Aldi's LiveGFree brand), reserving ⅔ cup.
  • 2 tablespoons liquid smoke. Can substitute with 1 tablespoon gluten free soy sauce.
  1. Preheat oven to 350 F degrees.
  2. Fry bacon in skillet until crispy and drain bacon on paper towels. Reserve 3 tablespoons of bacon drippings in skillet.
  3. Add washed and drained green beans to hot skillet and toss well with bacon drippings. Then add enough water just to cover, and cook beans on medium high until tender, about 12 to 15 minutes. Drain cooked beans in colander.
  4. Set aside ⅔ cup of canned fried onions.
  5. In a 9 X 13 or 9 X 9 glass baking dish, dump in cooked beans, can of soup, can of fried onions (except that ⅔ cup reserved), liquid smoke, and crumbled bacon. Mix all ingredients in baking dish until well combined.
  6. Bake uncovered for 20 minutes. Then evenly sprinkle remaining ⅔ cup fried onions on top and bake another 5 to 10 minutes, until onions on top start to just brown.
  7. Remove from oven and let cool about 10 minutes before serving.
